Venison Cooking Tips

Farm raised venison is extremely versatile and can be used in a variety of culinary styles. Create your own delicious taste sensation or try one of our tried and tested recipes.

Chilled Cuts

  • Always pre-heat the oven, pan or grill before cooking
  • Coat the venison with olive oil
  • Steak, cook 1 minute each side
  • Whole fillet, cook 300 grams x three minutes
  • Cover with foil and rest for equivalent cooking time

And remember

  • Cook meat quickly over a high heat to seal in natural juices
  • Serve medium rare
  • Chilled vacuum packed cuts will keep in the fridge for up to three weeks
  • Opened packs will keep in fridge for up to a week covered

Small Goods

  • Burgers: cook 12 minutes
  • Meat Balls: cook 10 minutes, turn regularly
  • Sausages: cook for 20-30 mins
  • Chipolatas: cook for 10 mins
  • Cook on medium heat
  • BBQ, pan fry or grill/ bake
  • Always use a light oil or spray your pan

Deli Goods

  • All products are hot smoked and therefore ready to serve
  • Chorizos & bierstix can be reheated in dishes
  • Keep in fridge up to a week after opening
  • Wrap in foil or grease proof paper
  • To improve separation of sliced products remove from pack and leave several minutes before using

Woodburn Venison Story

My passion for good food and a desire to educate the public about the benefits of New Zealand venison has seen my business grow from a weekend farmer’s market project to running a successful processing company.

Let’s take a step back. My husband Tony and I were successful deer farmers in the Hawke’s Bay and the Manawatu for many years. In 2000 we decided to make a change and started our business concept ‘pasture to plate’.
